Bean Freaks

After reading the article Bean Freaks in the New Yorker, I had to order heirloom beans from Rancho Gordo. They arrived so beautifully packed that I had trouble throwing the box into the recycling bin. I can't stop admiring them. But I have managed to open the package of cranberry beans and am currently soaking some to cook, and then add to a pico de gallo. 

So there are two cooking firsts here...I have never made a pico de gallo (I've chopped stuff but never formally titled it.) and I have never cooked with dried beans (split peas yes, dried beans, no).
